.K-dub.and.Contreras.

Ingredients:
[audio:  Like A Virgin – Madonna]
1 tablespoon olive oil
1/2 pound ground beef  (I used 96% lean)
1/2 pound italian sausage (without the casing…)
1 medium onion, chopped

3 cloves of garlic, minced
I beer of your choice
1 (14.5-ounce) can crushed tomatoes, chopped
1 (6-ounce) can tomato paste
2 tomatoes, diced
1 (8-ounce) box no-boil lasagna noodles
2 large eggs
2 cups ricotta
1/3 cup cubbed/crumbled/diced…however you can break it down… goat cheese

1/3 cup grated fontina cheese
1/3 cup grated asiago cheese
2 teaspoons freshly chopped parsley leaves
1 teaspoon salt
1 teaspoon black pepper

1 teaspoon Oregano
1 teaspoon Basil
Red pepper flakes to taste (optional)
1 (8-ounce) bag shredded mozzarella
1 (8-ounce) bag shredded Parmasean

Methodology:
1. Compile an epic cooking playlist. This would be one you can sing along/dance around the kitchen to. This is one of the most important steps. 


2.      Assemble ingredients. (Note there are some ingredients on the list that are not in the picture.  And some in the picture that I did not use...don't be fooled...I know there would have been a smart ass comment about that *Contreras*)

3.   Lightly oil the bottom of a 13 by 9 by 2-inch baking dish. [audio:Scary Monsters And Nice Sprites – Shrillex]












4.      In a large saute pan, over medium-high heat, add 1 tablespoon oil  and sauté onion, and garlic.


5.   Add meat. 



6.   When meat starts to brown add a bottle of your beer of choice...hmm Yuengling. 


7.   Reduce heat to [audio: Stuck Like Glue – Sugarland] medium-low  and let simmer for about 20 minutes. Make sure to stir once in a while, breaking up the meat with a wooden spoon.






















8. Take the pan off the heat and drain the pan of fat. Return to high heat until the rest of the water evaporates (DO NOT BURN!!! I added this step in because I suck at draining meat in pans, so there is always juices (eww) left over. Note pic #1 and pic #2). 


9. Add tomatoes, tomato sauce, crushed tomatoes, and pepper flakes (optional). Reduce heat to low and simmer for 30 - 45 minutes, stirring occasionally. [audio: Go (feat. Karen O) – Santigold] (Ok...I stuck my sauce in the crock pot at this point.....and left it on low for about 4 hours)



10. In a large bowl, whisk together eggs, then mix in asiago, fontini, goat, ricotta, 1/4 cup Parmesan, 1/4 mozzarella, parsley, oregano, red pepper flakes. [audio: Rumor Has It/Someone Like You – Glee Cast].












11. Spread a little of the meat sauce in the bottom of the prepared pan. Lay the noodles in the bottom of the baking dish, overlapping by about 1/2-inch. [audio: Somebody That I Used To Know – Gotye] Spread half the egg and cheese mixture evenly on top. Sprinkle half the remaining mozzarella and  parmasean cheese evenly over the egg and cheese mixture. [audio: Knee Deep – Zac Brown Band] Pour half the meat sauce on top. Repeat layering in same order ending with the Parmasean and Mozarella. [audio: Mr Know It All – Kelly Clarkson]

12. Cover with saran wrap and refrigerate for 30 minutes. [audio: Take A Back Road – Rodney Atkins (I REALLLY like this song…)]Bake in center of oven 30 to 35 minutes until sauce is bubbling around the edges and cheese is starting to brown. Let stand 10 - 15 minutes before cutting.

Hahaha, the only thing I ever give you crap for is your spelling! Like, you spelled "fontina" wrong... but I'm just gonna go ahead and pretend that "fontini" is the plural form... yes... cause you need more than one speck of cheese, duh. Lol.

In all seriousness, holy crap that looks delish! Did you really put a whole bottle of Yuengling in it? Mmmm!

Laura - Damnit. I thought I spell checked. *throws hands up* I knew cheating through English class in 8th grade would eventually bite me in the ass.

Katie - Don't look at the number of ingredients, think of it as pieces of sample that needs to be merged in at the end of field to see the big picture...or something. Shit. This week needs to end.
